嗜酸乳杆菌生产特性的研究

摘要:
以质量浓度100 g/L脱脂乳为培养基,对嗜酸乳杆菌在乳中的生长能力、产酸能力、产香能力以及蛋白质分解能力进行了研究。结果表明:在37 ℃条件下 ,嗜酸乳杆菌可在乳中生长、繁殖,对数期细菌数达109 mL-1以上。在10%接种量条件下,36 h嗜酸乳杆菌可在乳中产生103.25~108.56 °T的酸度,pH值达3.83~3.91,24~30 h产生1.871 6~2.144 0 mmol/mL双乙酰,3.232 2~3.684 4 mmol/mL乙醛,使发酵乳具有良好的风味。同时,嗜酸乳杆菌具有较强的蛋白质分解能力,48 h可以产生171.67~182.55μg/mL的氨基酸,使发酵乳具有较高的营养价值。

Study on the production properties of Lactobacillus acidophilus
Abstract:
Using 100 g/L skim milk as a culture fluid,ability of growing,producing acid and flavour,and proteolytic activity of Lactobacillus acidophilus were studied.The results showed that Lactobacillus acidophilus could grow well at 37 ℃,and the density of cells at the logarithm phase was above 109 mL-1.Through incubation for 36 h by adding 10% starter,pH was about 3.83-3.91,and Thorner was 103.25-108.56 °T,and that 1.871 6-2.144 0 mmol/mL biacetyl and 3.232 2-3.684 4 mmol/mL acetaldehyde were produced in 24-30 h to make the fermented milk have good flavour.Besides,the proteolytic activity increased gradually with time and reached 171.67-182.55 μg/mL milk after 48 h.
