挂杆和箱式烘烤烟叶吸湿特性及其影响因素研究

摘要:
【目的】探究不同装烟方式烟叶的吸湿特性及其影响因素,为烟叶回潮环节优化提供理论依据。【方法】以烟草品种Y2001为试验材料,采用挂杆烘烤和箱式烘烤烟叶进行回潮试验,通过构建吸湿动力学模型模拟吸湿过程,并探究不同装烟方式烟叶的微观结构、理化性质及质构特性对吸湿特性的影响。【结果】挂杆烘烤烟叶吸湿能力强,箱式烘烤烟叶吸湿能力弱;随着回潮相对湿度的增大,挂杆和箱式烘烤烟叶的吸湿速率和平衡含水率均增大,其吸湿曲线符合Weibull模型。挂杆烘烤烟叶横断面孔洞大、饱满,结构疏松;箱式烘烤烟叶孔洞小、干瘪,结构紧密。挂杆烘烤和箱式烘烤烟叶的烟碱含量和钾氯比差异不显著,挂杆烘烤烟叶的总糖、还原糖、总氮含量和糖碱比显著大于箱式烘烤,而氯含量和钾含量显著小于箱式烘烤。相同含水率下,箱式烘烤烟叶的硬度值和咀嚼性大、弹性小;挂杆烘烤烟叶硬度值和咀嚼性小、弹性大。【结论】挂杆烘烤烟叶吸湿性强,烟叶结构疏松,总糖(或还原糖)含量高,提供了更多的水分吸附位点,水分容纳能力更强。箱式烘烤烟叶达到与挂杆烘烤同一柔软度时需要更多的水分。不同装烟方式烟叶的吸湿特性差异明显,有必要依据吸湿特性寻求不同回潮方式进行回潮。

Moisture absorption characteristics and influencing factors of hanging pole and box cured tobacco leaves

Abstract:
【Objective】The moisture absorption characteristics and influencing factors of tobacco leaves with different barn loading methods were studied to provide theoretical basis for the optimization of moisture recovery.【Method】With tobacco variety Y2001 as the test material,the moisture recovery test was carried out by hanging pole cured and box cured tobacco leaves.The moisture absorption process was simulated by establishing a moisture absorption kinetic model,and the effects of microstructure,physicochemical properties,and texture characteristics of tobacco leaves with different barn loading methods on moisture absorption characteristics were explored.【Result】The moisture absorption ability of hanging pole cured tobacco leaves was strong,while that of box cured tobacco leaves was weak.With the increase of the relative humidity of moisture return,both the moisture absorption rate and equilibrium moisture content of tobacco leaves cured by hanging pole and box methods increased,and the moisture absorption curve conformed to Weibull model.Hanging pole cured tobacco leaves were large,full and loose in structure.Box cured tobacco leaves were shriveled,with small holes and a compact structure.There was no significant difference in nicotine content and potassium-to-chlorine ratio between hanging pole cured and box cured tobacco leaves.The contents of total sugar,reducing sugar,and total nitrogen,along with the ratio of reducing sugar to nicotine were significantly higher in hanging pole cured tobacco leaves compared to box cured tobacco leaves,while the contents of chlorine and potassium were significantly lower.Under the same moisture content,box cured tobacco leaves exhibited great hardness and chewiness,but low springiness.In contrast,hanging pole cured tobacco leaves had low hardness and chewiness,but high springiness.【Conclusion】The moisture absorption property of hanging pole cured tobacco leaves was stronger than that of box cured tobacco leaves because of their loose structure and high total sugar (or reducing sugar) content,providing more water adsorption sites and stronger water holding capacity.Box cured tobacco leaves required more moisture to achieve the same softness as hanging pole cured leaves.The moisture absorption characteristics of tobacco leaves with different barn loading methods were obviously different;therefore,it was necessary to find different moisture recovery methods based on their respective moisture absorption characteristics.
