| 【目的】研究外源褪黑素处理对2 ℃条件下冷藏黄瓜抗冷性的影响。【方法】将供试黄瓜在蒸馏水(对照)及50,100,500 μmol/L的褪黑素溶液中浸泡处理30 min后,于2 ℃条件下冷藏,在冷藏的第0,3,6,9和12天取样,室温(20~22 ℃)复温2 d后进行感官评价并测算冷害指数、失重率、相对电导率、呼吸强度及维生素C、丙二醛、可溶性蛋白、游离脯氨酸和活性氧含量,研究外源褪黑素处理对黄瓜采后冷藏期抗冷性的影响。【结果】与对照相比,100 μmol/L褪黑素处理显著提高了2 ℃冷藏黄瓜的感官评价分值及可溶性蛋白、维生素C、游离脯氨酸含量,降低了黄瓜冷害指数、失重率、相对电导率、丙二醛含量、呼吸强度和活性氧含量。【结论】 外源褪黑素处理能有效提高黄瓜的抗冷性,其中以100 μmol/L褪黑素处理组效果最好。 |

| 【Objective】The effect of exogenous melatonin treatment on chilling tolerance of cucumber stored at 2 ℃ was studied.【Method】Cucumbers were dipped in distilled water (control group),50,100 and 500 μmol/L melatonin solutions immediately after harvest.Changes in sensory evaluation,chilling injury index, weight loss rate,relative conductivity,MDA content,respiratory intensity,vitamin C,soluble protein content,free proline and active oxygen content were monitored periodically to analyze the effects of exogenous melatonin.The samples were collected at 0,3,6,9 and 12 days during storage at 2 ℃ and rewarming 2 days at room temperature (20-22 ℃).【Result】Compared with the control,100 μmol/L melatonin treatment significantly improved the sensory evaluation,soluble protein content,vitamin C content and free proline content while inhibited the chilling injury index,weight loss rate,MDA content,respiration intensity and active oxygen content.【Conclusion】Exogenous melatonin treatment can effectively improve the chilling tolerance of cucumber,and 100 μmol/L melatonin treatment had the best effects. |
