基于灰色系统理论对黄瓜营养品质的评价

摘要:
【目的】评价不同品种黄瓜的营养品质特性,以筛选营养物质丰富的品种。【方法】在常规施肥环境下以25份华北型黄瓜品种为试材,于黄瓜盛果期采样测定表征果实营养品质的7项指标,利用灰色系统理论,计算供试黄瓜品种7项品质指标与参考样的关联度,依据果实营养品质优劣对各黄瓜品种进行排序。【结果】供试黄瓜品种中,VC含量为432.5~625.9 mg/kg,变异系数7.98%;可溶性糖含量为1.13%~2.12%,变异系数13.34%;可溶性蛋白含量为1.03~1.82 mg/g,变异系数15.10%;游离氨基酸含量为13.88~20.86 mg/hg,变异系数11.16%;有机酸含量为1.07%~2.99%,变异系数26.05%;硝酸盐含量为80.16~386.76 mg/kg,变异系数34.33%;亚硝酸盐含量为0.699~1.681 mg/kg,变异系数23.01%。其中有机酸含量、硝酸盐含量和亚硝酸盐含量差异较大,Vc含量差异最小。供试黄瓜品种中与参考样关联度(等权和加权)排序在前2位的品种是改良津春2号和津优36号,即二者综合品质表现最好,排序在后2位的是中农26号和长青二号,即二者综合表现最差。综合评价结果与25份黄瓜品种各营养指标分析结果一致。【结论】不同黄瓜品种在品质方面存在较大差异。综合营养品质最好的黄瓜品种是改良津春2号,营养品质最差的是长青二号。灰色系统理论避免了单一性状评价的偏差,用于黄瓜营养品质分析较为合理。

Evaluation of cucumber nutritional quality based on grey system theory

Abstract:
【Objective】This study evaluated the nutritional quality of different cucumber varieties to screen the varieties with rich nutrients.【Method】A total of 25 cucumber varieties from North China were tested under conventional fertilization.Seven indexes measured at mature fruit stage were related to reference samples based on grey system theory,and the cucumber varieties were ranked according to nutritional quality.【Result】Vc contents of tested cucumber varieties were 432.5-625.9 mg/kg with variation coefficient of 7.98%.Soluble sugar contents were 1.13%-2.12% with variation coefficient of 13.34%.Soluble protein contents ranged 1.03-1.82 mg/g with variation coefficient of 15.10%.Free amino acids contents ranged 13.88-20.86 mg/hg with variation coefficient of 11.16%.Organic acid contents ranged 1.07%-2.99% with variation coefficient of 26.05%.Nitrate contents ranged 80.16-386.76 mg/kg with variation coefficient of 34.33%.Nitrite contents ranged 0.699-1.681 mg/kg with variation coefficient of 23.01%.Different cucumber varieties had large differences in contents of organic acid,nitrate and nitrite,while the differences in Vc were the least.The varieties with the highest relational grade rank were Gailiangjinchun 2 and Jinyou 36,indicating they had the best comprehensive quality.The varieties ranked the last were Changqing 2 and Zhongnong 26,indicating their quality was the worst.The comprehensive evaluation results were consistent with their nutrition indexes.【Conclusion】There were large differences in nutritional quality of different cucumber varieties.Gailiangjinchun 2 was the best cucumber variety based on comprehensive quality while Changqing 2 was the worst.The grey system theory avoided the deviation in assessment of single quantitative character and it was reasonable to analyze cucumber quality.
