| 【目的】分析不同品种山葡萄酒中的花色苷成分,为山葡萄品种选育和山葡萄酒加工提供理论依据。【方法】应用HPLC-MS/MS技术,以左山一、左山二、双红、双优、双丰5个山葡萄品种为试验材料,分析不同品种山葡萄酒中花色苷成分的差异。【结果】同一产地不同品种山葡萄酒中花色苷的种类和总花色苷质量浓度略有差别,左山一、左山二、双红、双优、双丰葡萄酒中的花色苷种类分别有13,14,13,14和14种,其总花色苷的质量浓度分别为 1 523.568,1 525.589,1 409.071,1 140.323,1 292.324 mg/L。【结论】5种山葡萄酒中共检测出15种花色苷,其中左山二葡萄酒中总花色苷质量浓度最高。 |

| Abstract: |
| 【Objective】This study was conducted to investigate the anthocyanins composition in different Vitis amurensis wines so as to improve wine processing and variety breeding of V.amurensis.【Method】Difference in anthocyanins in five V.amurensis. wines (Zuoshanyi,Zuoshaner,Shuanghong,Shuangyou and Shuangfeng) were studied using HPLC-MS/MS techniques.【Result】Results showed that the anthocyanins and their concentrations in red wines fermented from different grape varieties with same geographical origin had slight difference.The numbers of anthocyanin types in Zuoshanyi,Zuoshaner,Shuanghong,Shuangyou,Shuangfeng were 13,14,13,14 and 14,respectively.The concentrations of total anthocyanins of Zuoshanyi,Zuoshaner,Shuanghong,Shuangyou,Shuangfeng were 1 523.568,1 525.589,1 409.071,1 140.323,1 292.324 mg/L,respectively.【Conclusion】A total of 15 anthocyanins were detected from five V.amurensis wines.The concentrations of anthocyanins in Zuoshaner wine were the highest. |
