| 对菊苣（Cichorium intybus L.）系列产品的开发研究进行了述评。介绍了菊苣的特征特性及菊苣块根经现代生物技术深加工后，可得菊粉、低聚果糖及高果糖浆。以菊苣为原料生产的菊粉系列产品，以其特殊的生理功能正在被现代人作为理想的糖源所接受。菊苣作为一种宝贵的植物资源，开发利用前景广阔。 |

| Abstract: |
| This paper reviewed the development and the biological and ecological characteristics of the chicory (Cichorium intybus L.),which is rich in inulin.After processing inulin,oligosaccharides and ultra-high fructose glucose syrups (UHFGS) were achieved by modern biological technology.Inulin or oligosac-charides and ultrahigh fructose glucose syrups (UHFGS) are being accepted by people because of their peculiar physiology function.The development of chicory must have a bright prospect. |
