6种保鲜剂对天麻保鲜效果的影响

摘要:
【目的】探讨不同保鲜剂对天麻的保鲜效果,为天麻保鲜提供理论基础。【方法】在18~20 ℃下,采用体积分数均为1%的3种生物保鲜剂(茶多酚、溶菌酶、夏枯草提取物)和3种化学保鲜剂(壳聚糖、异抗坏血酸钠、柠檬酸)涂膜处理新鲜天麻,每5 d测定1次样品的质量损失率、软化腐烂率、硬度和可溶性固形物(SSC)、维生素C(Vc)、可滴定酸、天麻素、丙二醛(MDA)含量及呼吸强度、过氧化物酶(POD)活性、过氧化氢酶(CAT)活性。【结果】6种保鲜剂均可一定程度延缓新鲜天麻贮藏期间感官品质、营养品质的下降,延长贮藏期,其中化学保鲜剂以异抗坏血酸钠的保鲜效果最佳,所有测定指标与对照组相比均显著改善(P<0.05)。生物保鲜剂以夏枯草提取物的效果较好,但稍逊于异抗坏血酸钠。【结论】用异抗坏血酸钠处理天麻,可以保持其贮藏品质,延长其贮藏寿命,效果优于其他保鲜剂。

Effect of six anti staling agents on quality of Gastrodia elata during room temperature storage

Abstract:
【Objective】The effects of different preservatives on post-harvest physiological and storage quality in Gastrodia elata tuber were studied to provide basis for prolonging storage life of fresh Gastrodia elata.【Method】Three biological preservatives of tea polyphenols,lysozyme and Prunella vulgaris extract and three chemical preservatives of chitosan,sodium erythorbate and citric acid were used to treat Gastrodia elata as fresh keeping agents at 18-20 ℃.The mass loss rate, softening decay rate,hardness and soluble solids (SSC),vitamin C (Vc),titratable acid,gastrodin,malondialdehyde (MDA),respiratory intensity,peroxidase (POD) activity and catalase (CAT) activity were measured every 5 days.【Result】All six fresh keeping agents could moderately delay the decline of sensory and nutritional quality and prolong the storage period of fresh Gastrodia elata.Sodium erythorbate group had the best fresh keeping effect,and all the test indexes were improved compared with the control group (P<0.05).Among the chemical preservatives,Prunella vulgaris extract group had the best preservation effect,slightly worse than sodium erythorbate.【Conclusion】Gastrodia elata treated with erythorbic acid had the best storage quality and longest storage life.
