广西罗城毛葡萄多酚、黄酮和白藜芦醇的组成特性及其抗氧化活性研究

摘要:
【目的】评价毛葡萄的营养与功能活性,为其综合开发利用提供理论参考。【方法】以2014年采自广西罗城的13个株系的毛葡萄为材料,采用有机溶剂浸提法从毛葡萄中提取多酚、黄酮和白藜芦醇等抗氧化活性物质,用比色法测定总多酚与总黄酮含量,用高效液相色谱法测定白藜芦醇含量,用DPPH、ABTS和还原力等方法分析其抗氧化活性。【结果】所选样品的多酚、黄酮、白藜芦醇含量及抗氧化活性在不同株系间存在较大差异,其中多酚含量为1.97~3.14 mg/g,黄酮含量为0.41~1.35 mg/g,白藜芦醇含量为0.75~8.81 μg/g,抗氧化活性的DPPH自由基清除率为35.07%~89.34%,ABTS自由基清除率为17.86%~32.32%,还原力为1.21~2.32 mg/g。【结论】广西毛葡萄含有丰富的多酚和黄酮类物质,抗氧化活性较高,具有很好的应用潜力。

Contents and antioxidant activities of polyphenol,flavonoid and resveratrol in Vitis quinquangularis Rehd

Abstract:
【Objective】The study evaluated the nutritional and functional properties of Vitis quinquangularis Rehd to provide basis for its application. 【Method】 Berries of 13 different varieties of Vitis quinquangularis Rehd were collected from Luocheng,Guangxi in 2014.The total polyphenol and flavonoid contents were analyzed using the colorimetric method and resveratrol content was determined using HPLC method.Their antioxidant activities were also assessed using DPPH,ABTS,and reducing power assays.【Result】Significant differences in contents and antioxidant activities of polyphenol,flavonoid and resveratrol were found among different samples.The total contents of polyphenol,flavonoid and resveratrol were 1.97-3.14 mg/g,0.41-1.35 mg/g,and 0.75-8.81 μg/g.The antioxidant activities were 35.07%-89.34% for DPPH and 17.86%-32.32% for ABTS,and the reducing powers were 1.21-2.32 mg/g.【Conclusion】Vitis quinquangularis Rehd from Guangxi were rich in polyphenol and flavonoid and they had high antioxidant activities and great application potential.
