苹果冷藏保鲜过程的传热学分析

摘要:
从传热学角度分析了采后苹果冷藏过程中果实内部的热量传递状况,并利用数值方法模拟计算了苹果果实内部一维有内热源不稳态温度场,并根据结果定量分析了环境温度、组织导温系数以及组织呼吸代谢热等对传热的影响。

Heat transfer analysis of apple during cold storage
Abstract:
Based on heat transfer,the process of heat transfer in apple fruit after harvest is analyzed during the cold storage.One-dimensional unsteady conduction with internal heat generation to apple fruit by using numerical method is calculated.The effects of heat transfer caused by the environmental temperature and metabolized heat are quantitatively analyzed,which plays an important role in further researching of fruit products during cold storage and on plant stress resistance.
