南瓜果实发育过程中主要营养成分的变化

摘要:
以“蜜本”南瓜为材料,对其花后10-50 d果实中主要营养成分含量的变化进行了研究。结果表明,南瓜多糖、β-胡萝卜素、氨基酸、蛋白质、总糖、还原糖含量均呈持续增加趋势,其中南瓜多糖含量在花后10~40 d增加较快,花后40~50 d增加较慢;β-胡萝卜素含量在花后10~20 d增加较快,花后20~40 d增加较慢,而花后40~50 d迅速增加;氨基酸含量在花后10~20,20~40,40~50 d分别呈现“快、慢、快”的增长规律;蛋白质含量在花后10~20 d增加较快,花后20~50 d增加较慢;总糖含量在花后10~20,20~30,30~40,40~50 d分别呈现“慢、快、慢、快”的增长规律;还原糖含量在花后10~30 d增加稍慢,花后30~50 d增加稍快。抗坏血酸含量在花后10~40 d呈现持续降低趋势,而花后40~50 d又逐渐增加。各矿质元素含量变化规律较为复杂。总糖与β-胡萝卜素、总糖与蛋白质、蛋白质与氨基酸含量变化规律相似,且存在一定的相关性。

The change of major nutrient component during fruit development of pumpkin (Cucurbita spp. )
Abstract:
The change of the nutrient contents of Miben pumpkin during 10-50 days after flowering was studied.The contents of pumpkin-amylase,β-carotene,amino acid,protein,total sugar and reduced sugar increased.The content of pumpkin-amylase increase quickly during 10-40 days and increase slowly during 40-50 days after flowering.The content of β-carotene increased quickly during 10-20 days and slowly during 20-40 days after flowering,but increased more quickly during 40-50 days after flowering.The change trend of content of amino acid was “fast-slow-fast” during 10-20 days,20-40 days and 40-50 days.The content of protein increased quickly during 10-20 days and slowly during 20-50 days after flowering.The change trend of content of total sugar was “slow-fast-slow-fast” during 10-20 days,20-30 days,30-40 days and 40-50 days.The content of reduced sugar increased slowly during 10-30 days and quickly during 30-50 days after flowering.The content of Vitamin C decreased during 10-40 days and increased little during 40-50 days after flowering.The change trends of minerals were more complicated.The change trends of total and β-carotene,total and protein,protein and amino acid were similar and correlated.
