冻干嗜酸乳杆菌菌粉制备及特性研究

摘要:
通过对嗜酸乳杆菌发酵曲线的测定,初步掌握了该菌的生长、繁殖和代谢规律。在此研究基础上进行的发酵试验结果表明,采用20 g/kg接种量,37 ℃恒温静置培养6 h,活菌数最多,菌龄处于对数生长期末期,适宜冻干;对几种复合保护剂的保护效果进行研究,得到冻干复合保护剂的最佳配比为:蔗糖40 g/kg,甘油10 g/kg,L-cys 1 g/kg和Vc 1 g/kg。

Research on of production quality and quality of Lactobacillus acidophilus powder
Abstract:
The growth,reproduction and metabolic pattern of Lactobacillus acidophilus were studied basically by measuring its fermentation curve.The result showed that the number of live microbes was the greatest when amount of inoculation was 20 g/kg and cultivated 6 h at 37 ℃ constant temperature.The age of microbe was in the stage of the telophase of logarithm growth,it was suitable for freeze drying.The optimal compound pretectants were as following:sucrose 40 g/kg,glycerin 10 g/kg,L-cys 1 g/kg,Vc 1 g/kg.Then live microbe was obtained by fermenting.
