黄粉虫等昆虫的营养价值与食用性研究

摘要:
黄粉虫、蚱蝉、柞蚕蛹、蜂蛹、蝗虫和蚂蚁等昆虫均可作为食品。经测定表明,其蛋白质含量为35. 3%~71. 4%,必需氨基酸比值接近人体需要的理想比值;脂肪含量为7. 19%~40. 5%,不饱和脂肪酸含量较高, P /S值为0. 9,为人类理想的食用脂肪;维生素E,B2含量较高,有益无机盐锌和硒含量十分丰富。安全性毒理学评价证实黄粉虫Ⅲ加工的食品食用安全无毒。

A Research on the Nutritional Value of Tenebrio Molitoe L and Other Five Edible Insects
Abstract:
A research on the edibility of 6 insects, i. e.Tenebriomolitor L.,Cryphotympana atrata Fabr.,Antrerciea pernyi Guerin-Meneville,Apis mellifera L.,Locusta migratoria manilensis Meyen and Palyhachis vicina Roger. is conducted and their nutritional components aremeasured as follows: their protein content varies from 35. 7% to 71. 4% and their fat content from 7. 19% to 40. 5%. The ratio value of their essential amino acids content appropriates to the physical development of human bodies, and some of the ratio value of P /S in their fat amounts to nearly 0. 9, which can meet the requirment of human diet.Although all the 6 edible insects so far studied have rich Vitamine E, Vitamine B2,Zine and Selenium,T.molitor L. is expected to become a popular food forhuman beings simply for its lower costand better taste.The assessment of safety toxicology certificates that T.molitor Ⅲ is a safe and non-toxic food.
