| 多酚微胶囊化技术是将多酚包埋、封存在微型胶囊内成为一种固体微粒产品的技术。近年来，微胶囊化技术得到了迅速的发展，在多酚领域有着广阔的应用前景。介绍了微胶囊技术的原理、组成和方法，着重阐述了多酚微胶囊产品的研究进展和特性评价指标，讨论了目前多酚微胶囊化技术中存在的问题，并对其发展前景进行了展望。 |

| Microencapsulation of polyphenol is a technique that encapsules polyphenol to obtain solid particle product.In recent years,development of microencapsulation is rapid and it is widely used in polyphenol fields.In this review,the principles,components and methods of microencapsulation are introduced,and the latest research progress,characteristics of polyphenol microcapsule products,key issues and application prospect are elaborated as well. |
