不同提取工艺对糜子淀粉糊化特性的影响

摘要:
【目的】分析水提和碱提2种方法提取的糜子淀粉的糊化特性,为糜子淀粉提取工艺的选择和综合利用提供参考。【方法】在单因素试验的基础上,通过正交试验确定水提法、碱提法提取糜子淀粉的最佳工艺,测定糜子淀粉的理化指标和糊化特性,并对2种方法提取的糜子淀粉品质和糊化特性进行比较。【结果】糜子淀粉水提法的最佳工艺为:浸泡温度30 ℃,浸泡时间24 h,固液比1∶10,在此条件下淀粉提取率为(71.59±0.21)%;碱提法的最佳工艺为:碱液质量分数0.30%,浸泡温度35 ℃,浸泡时间20 h,固液比1∶10,在此条件下淀粉提取率为(82.40±0.13)%。与水提法相比,碱提法提取的糜子淀粉含量(845.1 g/kg)、白度(99.9%)、峰值黏度(1.546 Pa·s)均有所提高,淀粉热糊稳定性、抗老化能力分别降低1.05%和25.1%,糊化温度降低8.05 ℃。【结论】采用碱提法提取糜子淀粉时,其提取率较水提法提高了15.1%,峰值黏度提高29.5%,碱提法提取糜子淀粉的理化指标较好。

Effect of different extraction processes on pasting properties of proso millet starch
Abstract:
【Objective】In order to improve the comprehensive value of proso millet,water soaking method and alkali soaking method were applied to prepare proso millet starch and study the pasting properties of starch.【Method】An orthogonal array design based on one-factor-at-a-time experiments was used to determine the optimum process parameters of water-soaking method and alkali soaking method,then the physic chemical indexes and pasting properties of proso millet starch were determined and the two extraction methods were compared from quality and paste properties of proso millet starch.【Result】The optimal extraction conditions of water soaking method were:soaking temperature was 30 ℃,soaking time was 24 h,solid to liquid ratio was 1∶10,and starch extraction rate was (71.59±0.21)%.The optimal extraction conditions of alkali soaking method were:Sodium hydroxide mass fraction was 0.30%,soaking temperature was 35 ℃,soaking time was 20 h,solid to liquid ratio was 1∶10,and starch extraction rate was (82.40±0.13)%.Physic chemical indexes of proso millet starch extraction with alkali soaking method were better.Compared with water soaking method,the viscosity of starch from alkali soaking method raised by 29.5%,thermal stability and anti ageing ability of proso millet starch paste reduced by 1.05% and 25.1% respectively,and pasting temperature reduced by 8.05 ℃.【Conclusion】Starch extraction rate increased by 15.1% and better physical chemical indexes were obtained when using alkali soaking method.
