烤烟总氮和蛋白质含量与主要挥发性香气物质的关系

摘要:
【目的】为卷烟叶组配方提供理论依据。【方法】以99份烤烟基因型为材料,运用统计方法研究了在不同总氮、蛋白质含量水平下烟叶主要挥发性香气物质含量的变化。【结果】(1)样本总氮含量相对较低,蛋白质含量处于适宜范围,新植二烯含量较高。(2)烤烟总氮、蛋白质含量与主要挥发性香气物质含量之间存在一定的内在联系。在总氮、蛋白质含量均为低类群时,芳香族氨基酸降解产物、类西柏烷类降解产物、新植二烯含量和挥发性香气物质总量均表现为最低,美拉德反应物和类胡萝卜素降解产物含量均表现为最高;在总氮、蛋白质含量均为中等类群时,芳香族氨基酸降解产物含量也表现为中等,而类西柏烷类降解产物、新植二烯含量和挥发性香气物质总量均表现为最高;在总氮、蛋白质含量均为高类群时,芳香族氨基酸降解产物含量表现为最高,而类西柏烷类降解产物、新植二烯含量和挥发性香气物质总量均表现为中等。方差分析结果验证了上述聚类结果是合理的。【结论】一般烟叶总氮(15.3~18.8 mg/g)、蛋白质含量(84.2~103.4 mg/g)中等时,烟叶劲头适中、刺激性小,香气量充足,可用性高。

Relationship between contents of total nitrogen as well as soluble protein and main volatile aroma components in flue-cured tobacco leaves
Abstract:
【Objective】 The study provided academic gist for leaf group blending of cigarette.【Method】 99 flu-cured tobacco samples from Yunnan Province were used as materials to analyze the change of main volatile aroma components under different levels of contents of total nitrogen as well as the soluble protein in flue-cured tobacco leaves.【Result】 The results showed that:(1) the content of total nitrogen was low;the content of soluble protein was located in the proper range.Among all the main volatile aroma components,the contents of neoplytadiene were high.(2) The cluster analysis results indicated that there was inherent relationship between total nitrogen,the soluble protein and main volatile aroma components.The group with the lowest contents of total nitrogen and the soluble protein had the lowest contents of products of aromatic amino acid metabolism,and products degraded by cembrane,neoplytadiene and main volatile aroma components,but the highest contents of products of Maillard reaction and products degraded by carotene.The group with the medium contents of total nitrogen and the soluble protein had the highest contents of products degraded by cembrane,neoplytadiene and main volatile aroma components,and the medium contents of products of aromatic amino acid metabolism.The group with the highest total nitrogen and the soluble protein had the highest contents of products of aromatic amino acid metabolism,but the medium contents of products degraded by cembrane,neoplytadiene and main volatile aroma components.The analysis of variance showed that the cluster analysis was reasonable.【Condusion】 In general,tobacco leaves with medium contents of total nitrogen(15.3-18.8 mg/g)and the soluble protein(84.2-103.4 mg/g)had suitable physiological strength,small biting taste,rich volume of aroma and high usability.
