复合酶法提取苹果籽油工艺研究

摘要:
为了确定复合酶法提取苹果籽油的工艺条件,以秦冠苹果籽为原料,通过单因素试验和正交试验,对其工艺条件进行了优化。结果表明,复合酶法提取苹果籽油的优化工艺条件为:苹果籽破碎度≤0.6 mm,料液比1:8,复合酶添加量0.8%(纤维素酶与酸性蛋白酶质量比1:1 m/m),酶处理时间8 h,pH值4.6,常压蒸汽处理20 min,在该提取工艺条件下苹果籽出油率高达21.44%。与溶剂浸出法相比,复合酶法具有出油率高和油品质好等特点。

Research on extraction of apple seed oil by complex enzymatic method
Abstract:
The paper focused on the study of extracting edible oil from apple seeds by using complex enzymatic method,with the Qinguan apple seeds as the subject.Based on a single and orthogonal experiment,the optimum conditions were found as follows:the fragmentation degree ≤0.6 mm;the solid/liquid ratio,1∶8;the amount of complex enzymes(fibrinase:acid protease=1∶1,m/m),0.8%;the reaction time,8 h;pH value 4.6;detoxification time,20 min.Under the above conditions the extraction rate was 21.44%.The result shows the complex enzymatic method has many advantages in improving yield and quality compared with the traditional solvent extraction methods,and predictably it will be widely employed in oil extracting industry.
