红富士苹果采后品质变化的破坏与非破坏检测研究

摘要:
采用冲击共振无损检测法、质构分析法以及颜色测定的测试方法,主要检测了苹果无损硬度系数、最大破坏力、果实弹性模量和色调角等参数在不同贮藏条件下的变化情况。结果发现,苹果的无损硬度系数与质构分析所得最大破坏力、果实弹性模量以及果实表面颜色有较好的相关性,苹果无损硬度系数与果实弹性模量的相关性明显优于其与最大破坏力的相关性。在苹果硬度检测中,冲击共振无损检测较质构仪测定的重复性、灵敏性更好。

Measurement of firmness changes of harvested "Fuji"apples with destructive and nondestructive method
Abstract:
Firmness changes in harvested "Fuji" apples were measured by nondestructive acoustic impulse response test,destructive texture analysis and background color measurement.The changes of nondestructive measured stiffness coefficient (S),maximum puncture force (Fmax),modulus of elasticity (E) and hue angle () were monitored under different storage conditions.The stiffness coefficient positively correlated with Fmax,modulus of elasticity and hue angle.The stiffness coefficient is correlated with elasticity modulus better than with Fmax.The nondestructive acoustic impulse response technique was more reproducible and its sensitivity to firmness changes was greater than the destructive puncture measurement.
