732型阳离子交换树脂在葡萄酒酒石稳定性上的应用

摘要:
采用732型阳离子交换树脂处理葡萄酒,收集不同交换倍数下的酒样进行冷冻处理,并抽样检测处理酒样的理化指标,结果表明:(1)离子交换树脂处理能够降低酒样中钾、钙离子含量,选择合适的交换倍数可使供试酒样获得酒石稳定性。(2)交换处理后的酒样中,总糖、总酸、干浸出物、PH值,酒度等均无明显变化,酒样的色度,香气略有损失,供试酒样口感有所提高。

Research of the application of 732-type positive ion exchange colophony on tartar stability of wine
Abstract:
723-type positive ion exchange colophony was used for wine treatment.Wine samples were frozen after treatment in different exchange times.The result indicated:(1) The contents of K+ and Ca2+ decreased after treatment of positive ion exchange colophony.Proper exchange fold used for the wine samples resulted in tartar stability.(2) There were no significant differences for the contents of sugar,total acid,dry extract,alcohol and pH of wines sampled after treatment of positive ion exchange colophony.Slightly losing of color density and aroma were found.The tastes of the wines sampled improved a little.
