利用自行设计的循环式热风干燥装置,在风温50~90℃,风速0.5~1.5m/s,片厚5~13mm三因素五水平二次正文旋转组合优化试验设计的23种工况下,模拟魔芋片单层热风干燥过程,研究了三因素对魔芋片干燥特性和效率的影响规律,探析了干燥机理和效应原因,得到干燥速率数学模型。统计检验结果表明,所得模型的置信度大于99%,可定量描述干燥速率随风温、风速、片厚的变化规律。 |

Simulated hot air drying tests for thin layer-sliced koniak were performed by using a self-designed recycle hot air drying device under the conditions of
50℃~90℃ for air temperature,0.5~1.5 m/s for airflow velocity and 5~13 mm for
thickness of the sliced konjak.The effect of the air temperature,the airflow speed.the
slice thickness and the dryin grate was studied in particular.From an analysis of the
drying mechanism and the effect of different factors on drying process,the mathematic
model of drying rate was obtained.The results colicluded from the monte carlo method
showed that the confidence level of the model was higher than 99%.So it could quantitatively describe the changing rules of the drying rate with air temperature,airflow velocity and slice thickness. |
