蕃茄果实耐藏性同活性氧代谢的关系

摘要:
测定了两个耐藏性不同的蕃茄品种的果实(绿熟期采收),在贮藏过程中,果肉中超氧化物歧化酶(SOD)、过氧化物酶(POD)、抗坏血酸氧化酶(AAO)的活性及抗坏血酸(AA)和过氧化氢(H2O2)含量的变化。结果表明:在贮藏过程中,H2O2含量及POD、AAO活性都有一峰值出现,而SOD活性及AA含量则不断下降;除AAO外,其他几种酶活性及物质的变化均存在着差异,其中SOD活性及含量AA可以考虑作为对蕃茄品种耐藏性进行间接鉴定的生化指标。

The Relationship between Fruit Storage Property and Active Oxygen Metabolism in Tomato(Lycopesicon esculentum Mill)

Abstract:
Fruits of two tomato varieties (lines) with differnt storage properties harvested at mature-green stage were analysed for the changes in superoxide dismutase (SOD), peroxide (POD) and ascorbic acid oxidase (AAO) activity and the contents of ascorbic acid (AA) and hydrogen peroxide (H2O2) in the study. The results showed that there appeared to have a peak value of H2O2 content of POD and AAO activity. However, the SOD activity and AA content decreased during the storage. It was also found that the changes in these substances except that of the AAO activtiy were in consistance in tomato varieties with different storage property. Among these substances, the SOD activity and AA content may be used as biochemistry indexes to determine the storage property of tomato varieties.
