杂种猪肉质研究初报

摘要:
对64头杜洛克、长白、八眉和关中黑猪的二、三元杂种猪的主要肉质性状测定结果表明,杂种猪的肌肉pH、系水力、嫩度、总色素和熟肉率等与其母本品种(八眉猪和关中黑猪)比较,无明显差异;以杜洛克为父本、八眉猪为母本的杂交组合较以长白为父本、关中黑为母本的杂交组合,在肉质性状、尤其在肌纤维和品味方面较优。

A Preliminary Report on Meat Quality of Crossbred Pigs

Abstract:
The meat quality of 2 and 3 breed crossbred pigs of 64 Duroc, Landrace,Bamei and Guanzhong Black pigs was determined. The results indicated that meat pH, holding capacity, tenderness, total pigments, cooked meat rate of erossbred pigs had no much apparent difference as compared with those of maternal pigs(Bamei and Guanzhong Black pigs). The cross combination between Duroe as the father pig and Bamei pig as maternal pig are much better than that between Landrace as father pig and Guanzhong Black pig as maternal pig in meat quality traits with muscle fibers and taste evaluation in particular.
